We ferment this cider in two batches, with two strains of Belgian-style abbey yeast, at high temperatures. Combined, these ferments present the archetypal Belgian beer nose of tropical fruit with hints of spice and pepper. We use a subtle infusion of oak to fill in the body and then sweeten with organic cane sugar.

Pretty good apple forward flavors, don't get too many Belgian ester notes but there are nice complex notes on the nose and finish to separate it from pure apple juice.

Hazy golden with no head. Apple, slight hat, yeast, some spice, and light sweetness. Finish is tart and medium dry. A very enjoyable cider. Well-balanced with enough complexity to stand out but also highly drinkable.

750mL bottle, pours a hazy blonde with a small white head. Aroma brings out dry apples, Belgian yeast and a little champagne. Flavour is very dry and along the same lines, with Belgian yeast, dry green apples, and a touch of funk. Not overly complex, but it works well. Nice stuff.
