Pineapples + Spices + Wild Yeasts
Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.
Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

330ml bottle - Pours an almost clear orange amber colour with a small off-white head that settled. Aroma is tart; moderately malty and fruity, pineapple, lemons and limes. A moderately sweet and sour taste, apricot, pineapple and citrus flavours with a light acidic, tart fruity finish.

33cl bottle from Abeervinum, Rimini, Italy. Pours brilliant amber, medium hazy, with limited, gross white foam. Aroma is funky, barrel. Body is average, with marked carbonation. Just a hint of final astringency. Taste is medium-high sour. Final is pretty short.

Off white spotty head on a rustic slowly carbonating body. Yeast, sweet fruit & spiced aroma. Medium bodied, smooth on the front with a sharp clean back. Oak, yeast, sweet pineapple, sugar, tart & spiced tastes with a bitter/sweet tangy finish. Nice one.

750ml bottle. Amber bronze colour, off-white foamy head leaving alittle lacing and aroma of sourish fruity & spiced notes. Taste is sweet, sour lemon rind, herbs, spice with pineapple hints. Slick mouthfeel, medium bodied, soft carbonation, dry tart finish. Quite drinkable.

Tried on Tap at the Strait and Narrow Lincoln. Hazy rich opaque golden colour with a thin white head. Aroma pineapple and spice. Taste tangy light sweet to sour. Full yet crisp body. Great!!
