Pineapples + Spices + Wild Yeasts
Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.
Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

On tap at Lajbah, Ljubljana. Sour Beer Weekend. Shared with little Dina. Clear amber with a glow, minimal head. Aroma is spices first, cinnamon and cloves present, sugary component, malty, some fruit. Very mild acidity in aroma. More sourness in the flavour and pineapple finally develops in the flavour. Moderate to high carbonation, light to medium body, light finish. Nicely balanced. Sticky.

Cask at GBBF 2019. Hazy red-amber. Flat. Nose is cinnamon, pineapple, vinegar. Quite tart, spicy, fruity, not overdone, though. Good, balanced use of additives.

Bottled 330ml. -at Valhalla Zagreb. Dark golden coloured, small white head, sweetish fruity nose. Sweet malty, mild pineapple, touch of overripe fruits and discreet spicy with fruity finish. Nothing more nothing less than ok.

Tap at Valhalla. Hazy golden body with white head. Cinnamon and flowery notes in the aroma, slightly buttery. Nice, light random fruity taste, guess it's the pineapple, though it's not overtly pineappley (if that makes any sense), lightly funky, light cinnamon-clove spicy touches. Soft. Er, generally okay, but not pushing my buttons.

Bottle. Hazy orange color with white head. Aroma is pineapple, cinnamon, dough. Taste is dough, pineapple, spices, yeasty. Oily mouthfeel with medium carbonation. Quite weird, but not bad at all.

Bottle from the Grumpy Goat, Reading. A rather unusual beer to go with Christmas dinner this year! Opaque, murky orange in hue with a light fizz and virtually no head. Moderately tart with scrumpy cider up front. Pineapple juice comes through in the aftertaste and the lasting finish with a hint of woody cinnamon too. Not the best sour, but at least it's a bit different. It was far too challenging for my family though, despite being not actually that sour. Will have to make sure I get a more standard beer for the Christmas dinner table next year!

[ As Wild Beer Tepache ].Unclear medium amber orange colour with a large, frothy - creamy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, tart, sour, pale malt, sweet malt, tea, flowers, fruity, pineapple. Flavor is moderate to heavy sweet, light to moderate acidic and light bitter with a long duration, flowers, canned fruit, tea, sweet malt, pale malt, pineapple, canned pineapple.
