Pineapples + Spices + Wild Yeasts
Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.
Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

On tap @ Ghetto Something, courtesy of Saska. Aroma of pineapple, white wine, yeast, spices and cereals. Pours cloudy pale amber color with thin creamy white head and nice lacing. Taste starts refreshing fruity and yeasty sour with faint yoghurt note, follows by mild fruity sweetness and cinnamon, mouthfeel is smooth, while finish is mild bitter. Medium body, creamy texture and lively carbonation in palate. Viva la Mexico...

Van tap bij de Drie Dorstige Herten in Utrecht. Zacht zuur, rood fruittonen, wat ananas. Bescheiden. Prettig. Wel beetje dun. Vrij korte nadronk. (21-7-2018).

On tap at Lajbah, Ljubljana. Pours slightly hazy orange-amber colour, topped with a medium sized offwhite ehad, not lasting. Gentle soury nose, some psices and just a hint of sweet fruitiness. Puckery sourness, fruity sourness is medium strong. Lighter body. Fresh feeling. But I missed the pineapple, sadly. Still very nice.

Draft @ Tilquin English Beer Festival 2018. Hazy golden colour, white foam. Nose of pineapple, vomit. Tart fruity, notes of cinamon, some cloves. Strange beer.

Sampled draft @ TCBW 2018. Low hazy darker orange, creamy off-white head. Nose is weird sweet caramel & sugar, not really what I expected when I saw sour. Flat plastic, sugar, candy, pineapple, tropical, I think I had the wrong expectations coming in here.
