Pineapples + Spices + Wild Yeasts
Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.
Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

Little hazy orange beer, no head. aroma: pretty spicy, vanilla touch, quite some pumpkin spices, cloves. MF: soft carbon, medium body. Taste: lots of wine gums, weird, soft acidity, some tannins. Aftertaste: slightly bitter, fruity touch, more wine gums, some citrus.

Sampled @ Tilquin English Beer Festival 2018. A slightly hazy orange golden beer. Aroma of orange fruits, herbs, yeast. Taste of apricot, orange fruits, zest, soft tart pineapple.

Flaska från SB. Mörk orangedisig med vitt skum. Kryddig doft av kryddnejlika, muskot, kanel, nästan lite juligt med toner av apelsin och apelsinskal. Något större kropp. I smaken brett med lite örtig och gräsig karaktär. Kryddigt här med, om än lite mindre än i aromen. Ananas känns inte särskilt tydligt, men kommer efter en stund. Mycket rivet citrusskal, citrusvita, grape, lite äpple, omogna kumquat med skalen på. Tycker den växer efter en stund, får lite mer toner av ananasskal. Snygg! (Tack Samuel214)

Sample from 75 cl bottle. Slightly hazy golden colour with a thin white head. Sweet aroma with tropical fruits and spicy notes. Taste is sweet. Medium. Medium body with a creamy texture and a soft carbonation. Finishes sweet with tropical fruits and pale malts.

75 cl bottle. Pours clear and golden orange, small off white head. Aroma is fruity, estery. Smooth fruity. Mellow. Lingering fruity, solid hoppy and smooth fruity finish.

Draught @ Sori Taproom. Poured ambery color, almost no head. Interesting aroma, honey sweet, mezcal like, some tartness in the back. Flavor has tartness, tequila wibes, fruit candy. Long finish with some tartness.
