Pineapples + Spices + Wild Yeasts
Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.
Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

Nice fizzy-creamy mediumlasting head. Aroma is slightly dry sour-ish fruity, soda powder, grass, sour pineapple, minerals, lime, hay, alcohol, hints of cinnamon. Taste is dry sour-ish mineraly, soda powder, fruit salt, berry skin, citrus, unripe berries, lime, minerals, grass, hay, sour pineapple, hints spices. Medium bitterness, slightly dry sour-ish fruity mouthfeel. Nice.

Flaska från SB. Mörk orangedisig med vitt skum. Kryddig doft av kryddnejlika, muskot, kanel, nästan lite juligt med toner av apelsin och apelsinskal. Något större kropp. I smaken brett med lite örtig och gräsig karaktär. Kryddigt här med, om än lite mindre än i aromen. Ananas känns inte särskilt tydligt, men kommer efter en stund. Mycket rivet citrusskal, citrusvita, grape, lite äpple, omogna kumquat med skalen på. Tycker den växer efter en stund, får lite mer toner av ananasskal. Snygg!

20th Nov 2017. Shrewsbury Beer Share Group Meeting in Chez Sophie. Cheers Simon for this 750ml bottle with it's green wax over the cap. Misty amber pour, white topping. Semi-sour with Pineapples and Pears in both the nose and flavours (no one else found any Pear notes, just me!), a hint of spice also within the taste, but this wasn't a beer that I could rave about. Different, interesting but lacked a bit of 'oomph' for me.

75cl bottle @ monthly tasting, Chez Sophie, Nov 17, courtesy of Simon. Many thanks. Pours a misty amber, thin bubbles. Aroma is vibrant lemon and pineapple, taste is similar with pleasant pineapple, spice, very mild sour elements, light tropical, refreshing but reckon a nice shot of tequila would benefit this nicely.

On tap at Mother Kellys Vauxhall. Hazy russet colour lasting beige head. Yes some sourness on the aroma. Pineapple juice and sourness in the mouth. Sour finish. Some sugar. Some hop. A sour wild ale with pineapple juice. Quite entertaining

Keg at Jessop House, Cheltenham. Pours dark orange with a small head. Aroma is sour cheese and a little Christmas spice. Taste is sharp and sour, with candy sugars. Very faro-esque. A little spice in the aftertaste.

Draught at BeerGeek Bar. Cloudy, amber colored. AROMA- spicy, especially cinnamon, baked apple. FLAVOR- quite sour, spicy, baked pineapple. Medium bodied.
