Pineapples + Spices + Wild Yeasts

Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.

Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

On keg at Six Degrees North, Edinburgh. Appearance - amber with light suds. Nose - apple vinegar, autumnal. Taste - more apple vinegar. Dry wood. Palate - long and kean from start to finish if slightly lacing the intensity of a Belgian version. Overall - properly sour. Good.

Bottle drank at some Mexican bar/restaurant in Soho. Domed a whole bottle post the Saturday Beavertown Extravaganza. Had this beer with some random Mexican ingredients added to it. It was pretty good, had some oily lime, salt, a bit of grassy bitterness. Medium bodied with fine to average carbonation. Fairly quenching finish with some more oily lime peel, grass, a little acidity. Not bad overall.

Keg at Craft CG. It pours hazy deep orange with a decent white head. The aroma is earthy, musty, funky, sweet pineapple vibes, sweat, candy and fruit salad. The taste is crisp, dry, tart, good mouth - pucker, bright acidity, pineapple, sherbet, must, funk, earth, Light spice and lilt with a dry, fruity finish. Medium body and moderate, foamy carbonation. I think this combo works rather well. Good fun.

(Draught at In De Wildeman, Amsterdam, 27 July 2017) Amber colour with foamy, off-white head. Fruity, sourish nose with dried fruit, caramel, pineapple, tea, brown sugar, spices and light funky aromas. Fruity, malty, tart taste with notes of caramel, dried fruit, pineapple, spices and a sweet and sour finish with low bitterness. Medium body, with a certain sweetness. Interesting, really tasty and very well balanced. Very nice.

Tap@Taphouse, Copenhagen (19/08/2017) - pours golden amber with white head. Sour fruity, medium acidic, grapes, some tropical fruity notes, funky edge, light floral accents, light to medium body, tart fruity finish.

Draft. A hazy amber beer with a lazing beige head. The aroma has notes of lacto, malt, and caramel. The flavor is sour with notes of lemons, brettanomyces, malt, and a bit of caramel, leading to a tart finish.

8 3 8 3 15 Draft at Planet Oedipus ’17. Very hazy orange with a cream colored head. Aroma shows of the pineapple and balanced cinnamon with citric notes, dough, a light funk and caramel. Flavour is moderate sweet and sour. Medium bodied with soft carbonation.

On tap at Lovebucket. Pours orange. Bread, caramel, spice, little salt, lots of tart pineapple. Really nice.
