Pineapples + Spices + Wild Yeasts
Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.
Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

7 3 7 3 15 Draft @ In De Wildeman, small sample, thanks Susette! Mostly clear golden color. Not much foam. Aroma’s: sourish, woody, light sweet, fruity. Flavor is moderate sweet’n’ sour. Light medium bodied. Finish is light woody and light sour. Quite likeable.

Keg @ Vocation & Co, Hebden Bridge. Deep amber with a thin head. Has a lightly soured fruitiness and a tangy aftertaste.

One-Third on tap at Piccadilly Tap. Naked surface, minimal lacing, slightly hazy amber body. Mid-tart pineapple aroma. Ripe pineapple tartness to the flavours character, lightly spiced. Tart and sweet ending. Well bodied. Refreshing. (Manchester 02.07.2017).

Bottle. Wine Rack, Sharrow, Sheffield. Hazed, gingery gold. Halo of white. Nose has cinnamon fruited loaf. Buttered toast. Grated ginger. Bit of a lambic type, airless cellar thing. Bit of a scorched grapefruit thing, too, but I am looking for it. Taste is fruity and sweet, with some spicy dryness. Syrupy mouthfeel. Fine carbonation. Lightest of sour finishes.

Draught @ Mig & Ølsnedkeren. Pours slightly hazy deep golden with a small offwhite head. Aroma of malt, yeast, light sour, light spice, cinnamon, light tart fruit. Flavor is light sour, light sweet, malt, spice, cinnamon, light tart fruit, pineapple. Medium body, average carbonation, light acidic finish. 6-3-7-3-14. 240617
