Pineapples + Spices + Wild Yeasts
Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.
Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

Keg at MK’s, BG, 14/06/17. Rich amber with a decent off white cap. Nose is on the turn pineapple chunks, spice, grains, damp straw, light funk tickle, pissy notes. Taste comprises dirty pineapple chunks, yeast flicker, grains, pissy, lemon, damp hay, wood must, peppery spice. Medium bodied, fine carbonation, drying close with a bitter sting. Ok sour but not one I’d rush back to.

Bottle from the dregs run. Cheers Stuu! Pours hazy amber with a thin white head. Aromas of spice, pineapple and funky yeast action. Taste has the cinnamon, sweet pineapple. Dry finish.

Bottle at Craigs. Pours golden orange, nose is pineapple, peppery, little tomato, brett, taste is juicy fruit, pineapple, funky, dry, spiced.

bottle at home .. amber .. thin white lacing .. soft funky .. tomatoes .. pinapple and lime ... soft sharp fruit nose .. herbal pinapple funk fruit .. sharp fruit.. odd dry herbal fruit .. Bottle at nicks... Dark brown.. Thin tan lacing.. Soft tart pinnapple.. Odd funk nose... Light wierf tart funk... Bih pinnapple but still not doing anything for me

Keg at the King’s Arms. A hazed burnt orange amber coloured pour with a halo of white head. Aroma is tangy, yogurt funk, pineapple, little vinegar, light citrus. Palate is semi sweet and sour, tangy, highish prickly carbonation. Flavour is composed of semi sweet Base malts, tangy pineapple, tart, citrus, lime powdery. Ok.
