We’ve done a thing, and what a thing we’ve done! There it is coming from the darkness! THINGS WE’VE DONE reflects viscerally our vision and our intentions in this new itinerary.

A Double Black India Pale Ale reaching 8% target, structured around our love for Cascadian Dark Ales but expressed as we do, without messing around. A massive strato-builded body of eight different malts: a blend of Maris Otter and Munich for a fundamental base; little Rye and a bit of Oats are paired with some Crystal malts to give layers of complexity, while the Carafa black malts are dancing softly assuming the personality of the color. Centennial hop is the gentlemen playing accordingly to the mix, giving the whirlpool the ouch of story that needs to be told. Fermented dry and classic with an English strain, and treated with respect in a modern version for a double dose of dry hopping where Sabro and Cashmere are leading the waltz.

It’s gentle and it’s modern, it reflects through our vision a love for hops and darkness in a subtle and expressive story. Got some candy and a hint of bitterness, it’s rounded but not heavy. On the nose it’s complex and full of layers: dates and a hint of freshly made moka, a bit of orange and grapefruit are paired with autumnal spruce and winterberry notes layered upon this gentle deep malt complex sensation.
