Saison brewed with red wheat and rye malt. Fermented in oak with our house microflora and then conditioned atop a blend of PA grown tart and sweet cherries from @3springsfruit at a rate of two pounds per gallon of beer. Ephemeral and drenched in drippy juicy cherry complexity.

(750ml 2017 bottle from the brewery shared) Pours quite hazy dark salmon-towards-pink with a small whitish head that fades quickly without lace. Notes of juicy pale tart cherry flesh, pink grapefruit flesh, crabapple, citrusy acidity and light zest, crackery grains, smooth oak, light to moderate mulchy funk, a little fruit skin tannins, rather crisp and mineral. Moderately tart through the sip, finishing lightly tart and a bit drying, juicy with lots of lingering pale cherries and pink citrus. Light to medium bodied, a little spritzy. Good one, it's a mix of fruity and slightly delicate without being too retiring.

Bottle thanks to Team North Jersey. Pours a cloudy orange red with small frothy white head that lasts. The aroma is wheat, funk, oak, cherry skin. Medium body, funky, oak, cherry, light tartness, very good.

Bottle. Pours hazy rose, medium off-white kinda fizzy head, dissipates quickly with decent residual and lacing. Aroma has notes of cherry, stems, cheesy funk, oak. Flavor is dry, light plus tart, medium funky, clean cherry notes and cheesy yeast esters, plus oak tannins. Medium body, mineral water notes and mouthfeel. Solid.

Bottle, given to my wife and I, by a young man who had followed us to Hill Farmstead in his car (unbeknown to us) and was grateful that we seemed to know the way. (We didn’t. We just followed the directions on the Hill Farmstead website). A very kind gesture that I couldn’t reciprocate because l was beer-less. Cheers! The beer pours dusky, rosè pink. No head. Nose has sweet maraschino type cherry. White oak. Soft, herbal funk. Some flora. Taste is soft, almond sweetness. Lightly tart. Has some stone fruit dryness. Fair amount of body, tempered by the tartness. Finishes light tart, and soft, fruity sweet. Nice beer, made even better by the generosity of a complete stranger.

Cloudy pinkish red color, thin white head. Aroma of dusty cherry and lemon. Taste has tart light cherry and citrus. Tasty.

On tap at the brewery pours a neon pink with some ringing white head. Nose has cherry, raisin, some lemon juice, a little bit of balsamic, some grist. Flavor is tart, cherry, lemon, some grapefruit, juicy but tart. Tart finish. Very drinkable.
