A deliciously sweet, French-style keeved cider pressed from our most prized bittersweet apple varieties: Dabinett, Tremlett’s Bitter, Yarlington Mill, Chisel Jersey, Dove, Kermerrien; as well as Winter Banana, King of Tompkins County and Golden Russet­—all grown and harvested on Pender Island. The keeving process involves a slow and cool fermentation with many rackings, clearing the cider naturally and leaving it residually sweet without any added sweeteners.

This cider has rounded tannins and a rich, fruity profile with a touch of traditional barnyard funk. Bottle conditioned for natural bubble.

750mL bottle, pours a clear golden, no head. Nose brings out barnyard funk, some hay, dry apple skins, and a touch of sugars. Flavour is semi-sweet upfront, with toffee, brown sugar, barnyard funk, and gentle hay. Good yeast complexity, nice funkiness, and some wild bugs. Very good.
