Stone grinds on stone high above the sleeping city, sending a cascade of dust and grit down to the cathedral square below. The gentle glow of a full moon casts a menagerie of silhouettes across the grand steps in a disquieting tangle of horns, fangs, wings and tails. Shadowed by the gallery of grotesques atop the walls, a grey and sullen figure moves with inexorable purpose. With a crunch and a burst of feathers an unsuspecting wren is the Gargoyle’s latest victim, but it moves on, unsatisfied, seeking more substantial fare.
This classically inspired West Coast IPA is reminiscent of a time when malt mattered and a bitter backbone was the key indicator of the style that turbo charged the craft beer revolution. Our interpretation uses traditional Cascade, Amarillo and Columbus hops to deliver a rounded flavour profile replete with grapefruit marmalade, pine and turkish delight. This traditional hop load gives the beer a smooth yet assertive and lingering bitterness which is backed up by a judicious touch of crystal and caramel malts to support with just the right amount of sweetness and body.

On tap at the brewery. Clear dark orange with medium white head. Malty, lots of pine, grassy, caramel in the back, resinous, nice lasting bitter finish. Medium bodied.
