We’re proud to introduce Silva, a wild ale blend with a lineage of collaboration—the latest release in our Ammonoosuc Room Series.
Presented in 750ml bottles (named for the Latin word for “forest”), Silva is a blend of several wild ale projects from our wild beer facility, conditioned on Willamette Valley Pinot Gris grape must before a final bottle conditioning. Silva pours a hazy pale yellow with a delicate, quickly dissipating foam. A gentle swirl reveals expressive lavender notes contributed by Lavandula—our 2023 collaboration with @keepingtogetherbeer and @olfactorybrewing utilizing New Mexican lavendar—portions of which were rested for a year in @chateaukefraya.officiel red wine barrels.
Lightly acidic with an earthy saison character, Silva offers subtle hints of lemongrass and pear carried by naturally vibrant carbonation. The finish brings a soft sweetness from its time on the Pinot Gris must, balanced by a clean, refreshing tartness. Silva is a beautiful bottle to share with friends and family around the holiday table.

Pours slightly hazed yellow into a tulip. Bright white head with little retention crackles as it recedes to skim surface. Honey, apricot and citrus aromas. Spritzy with sweet white grape, mild funk and honey upfront turning quickly to tart, underripe apricot and plum before the medium length lemon peel finish.

Orange colour with small white head.Aroma of apricot and barnyard nice fruit with mild juice mouth feels good note of tart fruit and barrel nice overall.
