Nøgne Ø’s only pasteurised product. Formerly known as Yamahai Muroka Junmai-Shu Sake. This Junmai was brewed using a Yamahai shubo, an older and more demanding method of yeast starter, which adds more complex flavours and depth to the Sake. The soft, pure local water provides a clean, clear expanse for bold acidity and umami along with a pleasing balanced aroma. It is Nama chozo which means it has been pasteurized only once just before bottling. This helps to retain typical Nama (un-pasteurized) freshness. Enjoy this Sake slightly chilled. It is very versatile and a great accompaniment to a broad range of cuisines; pairing well with Japanese, Asian fusion, and Western dishes to name a few. Rice type: 100% GINPU. Polishing ratio (seimaibuai) (精米歩合): 68%. Sake Meter Value (nihonshudo) (日本酒度): +8. Bottle size: 350 ml.

Clear little off-white fluid. Aroma: banana, bit cheesy, dairy, white spirit, bit sugary. MF: light body. Taste: green banana, fruity, bit sweet, cheesy, yuzu. Aftertaste: dairy, herbal, bay leaf, lime, bit lemony, more banana, cheese. Weird. But then again, this is my first Sake...

Served up into my backup glass @ The-Fest in Woosta.
Body is blank, if slightly yellowed from the house lighting.
Pears, starch, & faint flowers on the nose.
Taste faintly of banana & iced down Seven-up sweetness. Slight slickness. Low acid. Little tweak of alcohol burn.
Not very familiar with rating sake, but this one just seemed a bit too subtle.

Draught@CPH BF 2011. Very pale yellowish colour, no head. Aroma is mild fruits, rice, some slight alcohol as well as mild yeastyness. Flavour is alcohol, rice, some grains and mild fruityness as well. Quite a pleasant Sake.

Clear cristal water color with virtaully none head. Aroma is moderate rice, earthy rice, alcohol. Flavor is moderate to heavy sweet and a sharp acidic - fruity notes with a long duration, rice, earthy rice, sharp alcohol. Body is medium, texture is oily, carbonation is soft, finish feel is light alcoholic. [20101211]

bottle at home .. huge thanks to the Brewer for bringing these to MUSA... quite yellow .. nice light viscous ... nice clean rich earth rice nose ... quite nice aroma ... light acohol in nose .. open alcohol front ... light tartness ... soft earth rise ... light raw green alcohol... very drinkable...
tk2 light yellow hint ... rich deep earthy coconut tones ... definitly like the smell ... little aniseed nose ... soft fruits ... earthy ... light coconut... light alcohol... quite like this but the nose excels 3.7

Small coarseish foam disappears immediately. Hazy nearly clear greenish body. Fruity mineraly sugary aroma with alcohol and oil notes. Dry-sweet alcoholic herbal fruity taste with grape notes. Mid-bodied. Sharpish mouthfeel initially, then intensely hot at the end. Dryish mineraly fruity aftertaste is sort of faint. Well. It’s not at all bad, but there’s just way too much in-your-face alcohol for me. (0.35l bottle, wine monopoly.)
