Nøgne Ø’s only pasteurised product. Formerly known as Yamahai Muroka Junmai-Shu Sake. This Junmai was brewed using a Yamahai shubo, an older and more demanding method of yeast starter, which adds more complex flavours and depth to the Sake. The soft, pure local water provides a clean, clear expanse for bold acidity and umami along with a pleasing balanced aroma. It is Nama chozo which means it has been pasteurized only once just before bottling. This helps to retain typical Nama (un-pasteurized) freshness. Enjoy this Sake slightly chilled. It is very versatile and a great accompaniment to a broad range of cuisines; pairing well with Japanese, Asian fusion, and Western dishes to name a few. Rice type: 100% GINPU. Polishing ratio (seimaibuai) (精米歩合): 68%. Sake Meter Value (nihonshudo) (日本酒度): +8. Bottle size: 350 ml.

Bottle. It’s a clear, slightly yellowish sake, flat and headless. There’s some booze on the nose, some citric acidity too, it’s quite fruity and with a sort of pleasant rice aroma. The flavor has a certain acidity, with rice and fruityness in a quite pleasant blend. Warming, medium to full body and dry, finishing with fruits and rice. A rather nice one, but I have to admit I have a long way to go to fully appreciate sake. Rating: 6-3-6-3-12-3.0. 100611

Bottle, #015. A clear, lighlty yellowish sake, lightly oily pours. Apples, melon, a generic fruityness, hints of alcohol and a faint note of rice. Oily, full-bodied and warming in the mouth. Lots of fruityness, some alcohol notes and a touch of cooked rice. Lasting finish. Certainly an improved edition of Junmai-Shu. 121126

Bottle, courtesy of Nøgne Ø. Very pale straw coloured sake, no head nor carbonation. Filtered and pasteurised. Strong sweetish aroma of marzipan and almonds. Sweetish flavour, rice, marzipan. Dull.
