Time machine is a sake that re-creates the brewing methods of the Edo period. It is extremely sweet, yet with 3 times the acidity and 5-7 times the amino acids of a typical present-day Ginjo, its rich sweetness ends cleanly without lingering. Perfect as either aperitif or digestif, or as a sake-style dessert wine.

Thought I was getting a koshu but still and interesting historical recreation. Copper yellow pour. Nose is rich umami and maple syrup. Tastes of maple syrup, burnt grass, mushrooms, lemon, honey. Rich creamy mouthfeel. Funky finish.

Pours clear dark golden colour. Aroma of sweet grains, rice, riped yellow fruits, very dry. Taste of ripe yellow fruits, quite sweet, strong, rice, alcoholic finish.

Bottle from The Whisky Exchange . Slight amber in colour, the nose is rich and fruity. Peaches and woody sourness. The Saké starts extreme intense and fruity. Very interesting and deep, lots of yellow sweetish fruits, hints of alcohol and fermented peaches, light wood, fruity acidity. The aftertaste is deep and fruity, sticky sweetish with ripe sticky peaches, hard to describe but full-flavoured with a sweetish-dry aftertaste that lasts quite long.
Very interesting sweetish-fruity brew.

500 ml bottle. Brownish yellow color, rather thick looking. Aroma of caramel, raisins, funk, and rice. Sweet, fruity flavor with a strong sour edge, muscat grapes, raisins, rice, and sweet white wine. Interesting and tasty, though not perfect--a bit too funky and dirty tasting.
