Our Brewmaster Dan launched his Wild Fruit Cave this winter brewing Oud Bruin, a Flander’s style ale that is immensely complex both tart and sweet. Soft toffee notes lead with a blend of Wisconsin, British and German malts that first rested in the Coolship before spontaneously fermenting on oak in the cave. Hallertau hops, matured in the horse barn, elegantly support sparkling fruit notes that frolic before a punctuated oak finish. 100% naturally fermented in oak vessels this is an elegant beer that can be enjoyed now or the patient few can lie in their personal cellar to age.

Bottle. It pours a dark amber color with a tall khaki colored head. The aroma is full and intense with berries. orange, balsamic reduction, leather and acid. There’s some hints of dark fruity dates, fig and cocoa as well. Super complex and mouthwatering. The flavor is rich with more dark fruits. Fig, dates and balsamic reduction with some background notes of leather and cocoa. Nice orange citric acid throughout, but smooth on the palate and no bite in the finish. Really great stuff.

Bottle. Oak, cherry/red wine, prune, caramel malt, and hay aroma. Dark chestnut brown with moderate light tan head. Moderate sweet-tart cherry, red wine, caramel malt, and mildly bitter herbal hay flavor. Nice body. Sweeter than the average Oud Bruin but still very nice.

Bottle. Tart balsamic plum, raisin and oaky aroma. Cloudy brown with a small tan head. Sweet tart raisin/plum, balsamic, spicy oak flavor. Medium body, lively carbonation, with a slightly dry tannic mouthfeel.

12oz bottle pours a cola brown with a ring of white head. Nose has mild candy, some cherry/raisin, light wood, some jolly rancher. Flavors of cherry, raisin, candy, bubblegum, jolly rancher. Slick finish, a touch flat.

Bottle at RBSG Lobby Share. Pours a clear copper with small off white head that lasts. The aroma is leather, dark fruit, vinegar. Thin, vinegar, cherry skin, light tartness, very good.

Bottle - Nice cherry and some cinnamon Woody notes. Clear Amber with a decent white head. Nice light soured malts, cherry notes and alight Woody finish. Nice balance.

12oz bottle. Shared at rbsg-pburgh ndisappearing white ring-amber. A-sweet med malt, some vinegar. T-follows n
