SOTO “Junmai Daiginjo” is a gift from nature all the way from Niigata prefecture, which faces the Sea of Japan. The area is known for its abundance of pristine, soft, snowmelt water, and a highly skilled tradition of low-temperature fermentation that produces clear, crisp sake. This junmai daiginjo doesn’t disappoint, with its fruity, floral aroma and ethereal finish that complements everyday meals, like a skilled actor in a supporting role. All natural, gluten free, no additives, no preservatives, no added sugar, no sulfites. Tasting notes: smooth and crisp with hints of apple, cucumber and melon. Nose: slightly floral, gala apple, lemon zest. Rice type: Gohyakumangoku sake rice. YEAST: #1801. Polishing ratio (seimaibuai) (????): 50%. Sake Meter Value (nihonshudo) (????): -1. Acidity: 1.8. Sake shared at tasting. Kinda looks like egg white a little. Hardly any aroma. Flavor is sweetish a bit and it reminds me of lychee. Slight hint of alcohol burn in the finish. Quite pleasant.
