The making of IWA 5 is not a stable recipe but an experimental process reconsidered every year. IWA 5 evolves subtly – one year to the next, new traits emerge, and new facets appear. For IWA, the number 5 represents Assemblage. The controlled play of the many Sake elements to define a world of possibilities. From there, we select the few worth pursuing and refining into euphony. It’s all there. In its right place. At the right moment. Then, the whole has only to be fully revealed through the slow process of bottle maturation. IWA 5 is a new Japanese Sakè from Dom Pérignon's former Chef De Cave, Richard Geoffroy. It stems from Richard's deep respect for traditional Japanese Sake and his idea of innovation. The No. '5' represented on the bottle is the universal meaning of balance and harmony. The nose is delicate, initially floral hints of white rose, violet, peony. Followed by fruit: unripe banana, grapefruit, wild strawberry and melon. As the temperature changes, hints of aloe and green tea emerge, almond confection, a hint of wet vegetation and rubbed rock and a smoky miso accent to finish. Rice type: Yamada Nishiki, Omachi and Gohyakumangoku sake rice. Polishing ratio (seimaibuai) (精米歩合): 35%. Bottle size: 720 ml.
