Midnight Hunter was born from a moment of curiosity and harmony deep in our cellar. Two years ago, we were brewing a new beer from our 3 Minutes to Midnight series (our fruit and cocoa adjuncted Imperial Stout) while simultaneously barreling Bounty Hunter (a tropical leaning take on the same style). Curiosity got the better of Rocky, the Director of our Barrel Program, and in a flash of inspiration (and genius), he decided to blend the two.
This serendipitous whim quietly aged in barrels, undisturbed, and made its first public appearance when we poured it at a festival...where the response was overwhelming! It was clear we were onto something special.
A fifty-fifty blend of 3 Minutes to Midnight and Bounty Hunter, this Imperial Stout rested in bourbon barrels before being finished with coconut, vanilla, raspberry, and cacao nibs from our friends at Chocosol. Boozy, decadent, and richly layered, Midnight Hunter is a bold and delicious exploration into the world of wood-aged creations.

Appearance - 7 | Aroma - 5.5 | Flavor - 8 | Texture - 8 | Overall - 7
Black with minimal head. Aroma is whiskey, brandy, cocoa and soy sauce. Sweet and sticky mouth feel. Flavour dark chocolate, Bourbon, vanilla, brandy and warming alcohol. All over the place, but still somehow quite enjoyable.
