Saison with Montmorency cherries

Emma is a blend of saisons brewed with spelt and refermented on certified organic and Biodymanic grown cherries from Analemma’s orchards outside of Mosier, OR. While they are known for their wines, Analemma’s farm has a long history of a cherry orchard that produces rich and lovely Bing cherries.

We met Steven of Analemma last summer and bought some of his cherries. Sharing many of the same values around land and how we make wine and beer (with our mutual love of bike-packing!), we quickly connected and couldn’t help but brainstorm projects. Since then we’ve picked up more Bing cherries, a few of his barrels, and pomace from their 2024 harvest.

On tap at Fair Isle, pours a deep dark mahogany with a small pink head. Aroma is full of really pithy cherries, gentle oak, and rustic saison yeast. Flavour is tart, with lots of intensely tart and deep pitted cherries, some bugs, and light oak. Intense tart cherries that work real well. Very good.
