Our atypical fall beer uses herbs harvested from my property to accentuate the peppery, perfumy character of the style. Lemon Balm, bee balm, sassafras, catnip and spearmint collaborate with the Belgian yeast and a finishing dose of NY-grown Heritage hops to create a complex, herbaceous bouquet and flavor.

Draft at Paragon, 9/22/23. Clear darker orange color, off white head. Herbal, spice, grains. Herbal flavor dominates. Good, but overpowered by the herbal / spice.
