Although Sake with 70% (Junmai Sake) typifies to be full bodied, with pronounced earthiness and rice-influenced flavours, Chiebijin Junmai challenges the Idea of Junmai Sake & Kyushu style sake by maximises the potential of Yamadanishki Rice by polishing (milling) the rice down to 70% (milling 30% of Yamada Nishiki rice) producing a fruit driven aroma on the noes evoking both pome & stone fruits like fresh apple, peach, Japanese pear.

Chiebijin is brewed by Nakano Shuzo in Oita Prefecture. This sake won the first place “President’s Award” out of 650 entries in the 2018 KURA MASTER Sake Contest in France. This is our most popular product within the "Chie Bijin" brand. Being junmai-shu, it sports a unique mild fruity aroma that envelops the mouth and this ensures it pairs well with a variety of dishes. It has a soft, gentle sweetness and clean acidity. Nakano were aiming to create a reasonably priced, delicious Junmai sake. It is a well-balanced sake that can be enjoyed on its own or as a mid-meal sake with a wide range of appetizers, sashimi, and grilled dishes.

90ml cup at East x West, Sydney Airport. Clear very pale yellow colour, no head and aroma of rice, melon, fruit. Taste is sweet, rice, fruity, melon, with warming booze. Medium bodied, low carbonation, drying fruity finish. Nicely drinkable
