Roll the clocks back almost eight years from today – a young brewer was just about commissioning the first beers for an exciting new brewery that unbeknownst to them would snowball and become the home to some of the best hop-forward beer in the United Kingdom.

It feels like an eternity ago since those first Loka Polly test batches, and we won’t pretend they weren’t a little rough around the edges, but there was a beer amongst those first five that glimmered and showed just what was about to come. Galaxy Mosaic IPA was the beer that put our fledgling brewery on the map, and we’ve brought that recipe forward to give it a wholly 2025 Polly’s treatment in You Can’t Control.

Bright, punchy clementines, pomelo, and a berry medley play off spiky citrus and tropical notes in this homage to the ones that were there from the start, with no idea what a special brewery they were about to get themselves into.

Pours cloudy yellow with a lacing white head. Aroma: pomelo, clementine and herbal hops. Taste: grapefruit and pomelo. Creamy and fruity. Nice one.

Can from House Of Trembling Madness. Hazy golden body with a thick off-white head. Steady carbonation. Aroma of orange and peach. Flavour of lemon sponge and straw. Medium body with a smooth texture. Soft fizz. Punchy and delicious.
