Blueberry honey fermented and aged in oak for over a year blended with locally foraged spicebush berries. The spicebush berries add flavors of pepper, smoke, and anise creating a melange of foraged flavors.

Sampled as part of tour at Millstone. Apparently spicebush is akin to allspice. Allspice isn’t the best but this is definitely better. Honey is light-moderate sweet, moderate mouthfeel (not to sticky or sweet but not juice). Wasn’t particularly interesting.

Bottle from the source. Clear pale golden yellow color, scant edge head. Aroma of twigs, flowers, subtle pepper. Taste is peppery and sweet at the start, then tart floral citrus. Very tasty.

Bottle. Pours yellow gold. Nose/taste of ginger, lemon, honey, peppercorn, oak, blueberry and florals. Medium body.

Sampled from a 750ml bottle. Poured a pale, clear yellow color with a small wispy head. Aroma was light spices, herbal notes. Peppercorn, spices. Almost a peppery heat to it. Very pleasant tart notes. Delicious.
