A blend of 1-, 4- and 5-year-old lambic, macerated with Merlot grapes from the 2021 harvest After three years of maturation in Bordeaux barrels, a small portion of younger lambic was added to support refermentation in the bottle. The extended time in wood results in a drier profile with subtler fruit expression and a graceful oak presence, distinguishing it from our other grape lambics.
