Brewed with dedication and patiently barrel-aged for an extended period, the 2025 edition of Phoenix is a true labor of love. Selected bourbon barrels impart complexity, with notes of vanilla and oak blending seamlessly with a concentrated malt character and luscious mouthfeel. For the best drinking experience, we recommend a serving temperature of 12-14 degrees Celsius.

Draught @ Mikkeller Beer Celebration, 2026. Pours amber dark with a ruby head. Wood, roast and dark fruit. Vinous. Full bodied.

Bottle at home. Pours deep ruby, nose is caramel, vanilla, coconut, berries, leather, smoke, taste is sweet toffee, raisin, vanilla, coconut, sweet, fruity. 8/9/9/8/8

pours clear very dark brown, settles black with a bubbly small brown head.
aroma has a lot of bourbon and a roasted malty balance malts and bourbon are very well integrated and the beer feels like a whole, well blended. chocolate,coconut, vanilla, roasted malts, bourbon , wood, charred wood. In fact a really really good aroma.

flavor is syruppy sweet (like honey perhaps) bourbon, fainter roasted malts, alc. burn, licorice, liqeur. well blended as was the aroma.
Must admit that at the price paid i'm somewhat dissapointed, it's like this barley wine wants to be an imperial stout and ends up being a thin imperial stout with strange flavor notes. For this kind of dark barley wines it's between fairly good and very good. i think i would like more traditional barley wine malts OR a more imperial stoutish stoutness. it's like in-between two styles and failing two ways.
