Today we share with you a stout which started in our kitchen with buckets of adjunct testing, an overflowing blowoff buckets and subsequently beer running under our stove, through a crack, and into the basement of our rental house more than 15 years ago - Ambiente!

Ambiente's roots are still steadfast in that recipe brewed so long ago, but over time and with our understanding of these large stouts, we have continued to refine and experiment with every detail. As some beers come and go, these flavors of Mexican Chocolate continue to excite us and it is a beer we will continue to brew from time to time.

For this release of Ambiente, we blended Mexican Vanilla Beans, Cocoa Nibs from Ghana, Fresh Ground Cinnamon and Mulato Chiles into our Vibes recipe of a Missouri Imperial Stout. We bottled this in late 2025 and have allowed it some time to meld and mellow before sharing with you.

2021 version thnx to Tom VVH ! Pours black, no head. Scent is sharp, cinnamon. Taste is full, intense, sweet, cinnamon is recognizable, but not overpowering. Chocolaty. Silky, supersmooth , peppers are very mild (perhaps a bit too mild for the beer you'd expect) . Overall, a pretty great stout ! somewhat sweet, yet still very balanced.

Mmm still as much of a Mexican chocolate cake as I remember, absolutely delish, super chocolatey and fresh cinnamon, mellow peppers on the finish. Love it, especially how damn shared stouts are.

Bottle from trade. Black with brief, brown head. Aroma is all of the cinnamon buns. Some earthy notes and rich chocolate. Taste has a distinct dry taste of chili and cinnamon before transitioning into luscious chocolate. Spices really work well together with the beer. Awesome stuff!

Bottle thanks to John. Pours black with medium tan head leaving spotty lacing. The aroma is strong peppers, cinnamon, roast, dark chocolate, booze. Slick body, roasted malt, chili peppers, cinnamon, nice sweetness, boozy finish, very nice.

750ml bottle pours out sweet chocolate coffee roast vanilla cinnamon. Taste is more of the nice sweet chocolate vanilla cinnamon.
