Modern Sparkling Cider is our first step into non–barley-based alcoholic drinks, and a deliberate exploration of how our approach to brewing translates into cider.
Fermented with a light wine yeast, chosen specifically to lift fruity esters and keep the profile bright and expressive rather than rustic, funky or phenolic. A light dry hop with Nelson Sauvin was added, not to make this “hop-forward”, but to subtly reinforce fresh fruit aromatics.
Rather than attempting a traditional or heritage-style cider, the aim was to create something that feels like Cloudwater: clean, modern and designed to drink well in a bar or taproom environment, with a dry to medium apple cider base to provide enough structure and body without pushing into sweetness.

440ml can from HOTM. Hazy yellow gold colour, white foam head that quickly dissipates away and aroma of apple, fruit, citrus, resiny funk. Taste is sweetish, tangy, appley, some core, with gooseberry, citrusy acidity, and herby hop bitterness. Medium bodied, soft carbonation, drying hopped citric finish. Nicely drinkable.

Lemon juice yellow with a limited head.
Nose is apple skins, prominent tuned down Nelson hops, grass, straw.
Taste comprises apple pulp, straw, sugars, dusty hop.
Medium bodied, prickly carbonation, semi drying close.
I think there's a cider hiding within? Comes over like a cider/beer hybrid ... probably due to it being overly hopped.
Maybe a hit on a refreshing hot day in the garden but on a drizzly February
in Bermondsey it's a miss overall.

Pours milky pale yellow with only a thin white head. Loads of apple, bit of gooseberry, bitter hop, a little rubber. More apple freshness on the finish. Not bad.

Tap at 73 Enid Street. A milky yellow straw coloured pour with a a fine white head that sticks to the edges. Aroma is semi sweet, floury wheat, rubber, tarmac, light tang, pithy apple. Flavour is composed of, powdery apple, green tart apple,super crisp and tart, powdery,, pithy lemon rind in the finish.. Palate is super crisp, tart and refreshing, pithy, powdery carbonation. Nice.
