The base beer is a rich stout with little to no bitterness, brewed with gentle additions of cinnamon and nutmeg to create a warming layer of spice. After fermentation, vanilla pods and a hint of amaretto/almond were added in the conditioning tank to recreate the classic marzipan flavours of a Stollen. Collaboration with London Brewing. Vegan friendly.

29/1/2026. Cask at the 17th Colchester Winter Ale Festival. Good pour. Sweet stout, nice fruity stollen bready. Ashy vanilla. Medium sweet, light roasted bitterness. Good body, smooth, soft carbonation. Good.
