We are ready to release the first of our fall seasonal beers. This one is a tart sage butternut squash saison that we are naming Sage Conclusion. We did a brief kettle sour to add some tartness. We then used our typical oat & wheat heavy saison malt bill & fermented w/ a Belgian saison yeast. Finally, we added NC butternut squash & sage to the fermenter. The squash adds a silky mouthfeel & a nice earthy flavor w/ a subtle sweetness & the sage adds a nice herbal note that plays nicely with the saison yeast. This is by no means a typical saison, but does that surprise you?

$3.50 pint can, WW. Pale gold, light haze, giant white head. Lemon zest, yeast, brackish water nose. Flavor is lemon juice, light salt. Highly disappointing. Wonder if the can is bad. There's zero sage flavor in this, no sign of butternut squash... hell, all I taste is carbonated lemon juice. Maybe I should go grab some sage from my yard and throw it in here to give it some of the flavor that's advertised. Canned or best by 10/19/22 on the side... just a date, so don't know which. Anyway, purchased days ago and consuming live.
