It is no small undertaking to grow hops in the Southeast. The climate and daylight hours aren’t quite right for them, and humidity of the region can cause them numerous problems. Despite this, we are able to get a healthy yield from our modest hop yard, and we find that the Cascade that we grow at our brewery has some unique nuances that make the trials of tending to the bines worth the effort.
This Saison is a showcase of these hops, grown just steps away from our brewhouse and used when the hops are at their freshest. Working with hops in this way allows them to express more of the unique terroir that comes from where they are grown. We added them to a rustic Brett Saison brewed with a base of Murphy & Rude 6-Row Pale and Epiphany Malted Wheat.
After a prolonged primary fermentation and additional conditioning with brett we then waited patiently while the beer naturally carbonated and conditioned in kegs and bottles. The result is a fruity and funky Saison with a big aroma, that is floral with hints of white grape juice, floral hops, and Sauvignon Blanc. It has a round mouthfeel that carries a flavor that is citrusy up front but also brings forth spicy herbal tones from the hops and a funky minerally note. There is noticeable small bubble carbonation and a dry refreshing finish.

$11.99 500ml bottle, WW. Hazy pale gold with a large white head and tons of carbonation rising from the bottom. Sour hay, brett, basement, hints of stone fruit in the nose. Basement, grasses, peach skin, earth, dried flowers. Smooth.
