Our ever experimental and rotating DIPA makes its return with a triplet of varietals we've looked to let commingle for some time now. This one was hopped with hefty doses of Talus, Amarillo, and Idaho 7. As a somewhat smalller production brewery, it can be difficult to maintain some experimentation, and instead continue to focus on regulary produced beers for the sake of consistency and every other production requirement. This series of experimental beers allows us to fully embrace the idea without the worry that that we don't have enough of any particular hop to continually brew it, or that if it sucks, we'd have to dump it… and we can assure you, we've dumped them before and will do it again if necessary. The magic derived from the combination of our house ale strain, choices with respect to timing, amounts, and which cultivar and when, has really informed our dry hopping processes across other hop forward beers. Having said all that, we notice saturated impressions of ripe pineapple, tangerine flavor, sweet softer loblolly pine, grapefruit zest, and various candied citrus overtones.

Aromas are citrus pits, resin, malt, with hints of MJ and cheese. Flavors are similar to nose. Bittersweet and add in some overripe stone fruit. Slightly unbalanced but pretty good. Easy bitter finish.
