For this batch we trialed a new yeast strain from our friends at Escarpment Labs in Guelph that enhances the terpene concentration in beer to bring out more fruit flavours from the hops that we add. We paired this yeast with two hop varieties with high concentrations of terpenes - HBC 586 and Ontario Chinook - and the result is a crisp and stone fruit forward IPA. 6.1% ABV and absolutely quaffable.
