Modeled off of a traditional Belgian Tripel, Paper Heart is true to style in both flavor and ingredients. We used exclusively continental grown and processed pale and pilsner malts, European hops, a Trappist yeast strain and a generous dose of Belgian candi sugar, a specialty sugar commonly used in belgian beers. Paper Heart was naturally carbonated at the end of fermentation and left to condition for a number of weeks prior to packaging. The Belgian yeast character is evident with notes of spicy clove, pepper, and light banana on the nose and getting more evident as it warms. The light, dry body and higher carbonation make Paper Heart surprisingly drinkable for its strength.

Reviewed from notes.
Can to tulip.
Appearance: murky dark copper color with a two finger white fluffy head which settled down at a nice pace to leave some light lace
Aroma: crushed clove, light banana, Belgian candy sugar-ish tones, light grassy hops, a touch of citrusy tones and a light yeasty accent
Flavor: takes the prior noted aromas to intermingle to a sweet to bittersweet to spicy blend; finishes with the notes of banana, clove, the Belgian candy sugar and Belgian yeasty vibe
Texture: light bodied, between sessionable and being a sipper, some smoothness but also some dryness
Overall: surprisingly enough, this actually feels, tastes and smells like a Belgian tripel but the only thing is the color seems a bit darker other than that, man oh man, great job Upper Pass, I'd be happy to come back to this.
