Inky is our annual blend of imperial stout aged in some of our finest barrels. Our only rule for this beer is that it has to be composed of imperial stout and aged in barrels for 1, 2 and 3 years.
Inky (December 2024) is composed of: one part Heaven Hill barrel aged for 40 months; one part Willett Bourbon Barrel aged for 23 months and a ½ part each of 18 month old Russel Reserve Bourbon and Willett Rye Whiskey barrels.
This years blend is a particularly special one. We dug out one of our oldest barrels to anchor the blend and provide it with a structure that only patience, time and careful stewarding can provide. It is one of our most spirit forward blends to date, and we’re thrilled with it.
Inky (December 2024) is the culmination of many years of planning, brewing, and aging. It is the product of much patience, struggle and a focused eye to the future. A beer that rewards patience, flexibility and a wanton disregard for ROI.
