The dark burgundy Arkansas Black is considered one of the most beautiful of apples. The tart, crisp cider it produces is slightly tannic, and sports aromatic qualities reminiscent of green apples with honey and vanilla notes. This dry cider's flavor hints of tart strawberry or melon and pairs well with the earthy notes of truffled dishes and creamy soft cheeses. Its crisp minerality also recommends it for seafood, especially oysters and crab.

From a tasting flight at Albemarle CiderWorks. Poured a clear, very pale, almost clear yellow color with no head at all. Light carbonation running up from the bottom of the glass. Very light fruit notes, mild strawberry twang on the finish. Light semi-sweet apple, light booze. Crisp finish.

750 mL bottle from Whole Foods Charlottesville, 10/4/14. Pours a pale yellow color with lots of evident carbonation. Aroma of green apple, tannins, earth and melon. The taste is tart, dry apples, pineapple, tannic finish. Medium bodied, spritzy, strong carbonation, crisp texture, bone dry.
