Ale Fermented in Oak
Monarchist is a blend of mixed culture saison fermented and aged in neutral oak.
The 2025 blend comes from two batches of spelt and oat saison fermented and aged in an oak foudre and then allowed to continue their slow fermentation in neutral oak barrels.
Brewed with two types of malted barley, raw and malted spelt, raw and malted oats, and hopped with a blend of flower grown in Washington and New Zealand.
This beer was refermented to condition in the bottle.
Bottled 02/27/2025
Conditioned with: Organic sugar.
Cellar: Will continue to improve with age for the next 12+ months, best before fall 2028.
