St. Pierre Bierre werd gebrouwen door brouwerij Hedonis, het best bekend van het Ouwen Duiker-bier. Leopold De Ketelaere, de oprichter en eigenaar van de brouwerij, en Julie van de slagerij zijn al achttien jaar goede vrienden. Ze leerden elkaar kennen via de scouts en Julie is de meter van Leopolds dochter.
“Een samenwerking kon niet uitblijven”, zegt ze. “We waren een wandeling aan het maken met onze gezinnen toen ik voorstelde om een St. Pierre-bier te maken. Zo is de bal aan het rollen gegaan.”
Het bier is alleen te koop in de slagerij tijdens de eindejaarsperiode. Een fles kost 8 euro. “We hebben al heel goed verkocht”, zegt Hamerlinck. “Het slaat duidelijk aan. De slagerij blijft open tijdens de feestdagen, maar op is op. Er is bier zolang de voorraad strekt.”

Beer commissioned by Slagerij St. Pierre, a butcher shop near the St. Pieters train station in Ghent - and one of the most reputed ones in town, having been established already in the sixties (!). The current proprietor is a long-time friend of Hedonis' head brewer and allegedly asked the latter casually to create a beer for them - and so it happened, available from 75 cl bottles during the Christmas period and for as long as stocks last. Big cheers to my girlfriend for surprising me with this ultra-local Hedonis tick as a gift right after Christmas last year. Very strong gusher - I think I lost about 1/5 of the bottle as I was not entirely prepared for that. Huge, foamy, coarse, snow white, uneven-bubbled, cobweb-lacing, slowly receding head, hazy peach blonde robe with ochre-ish tinge. Aroma of soggy sandwiches, coriander seed, iron (unexpectedly), cooked potato, old dried orange peel, thyme, dry earth, clove, raw fodder beet, dried onion, moist white pepper, damp autumn leaves. Estery onset yet on the dryish side, unripe pear, cooked pumpkin touch, vague banana peel, medium carb with rounded, fluffy mouthfeel. Very bready middle, from soggy bread-like malts but also from yeastiness, spiced with coriander seed and a touch of curaçao, but also clove-like phenols (4-vinyl-guaiacol); floral hops bring confident bitterness, earthy and leafy, while apple peel, nutmeg and somewhat soapy coriander impressions linger. More yeasty and earthy than expected, this is an almost 'Walloon style' blonde, surely accompanying many of the butcher shop's products well - but I am a bit worried about how consumers who bought a bottle on top of their 'meaty' purchases there, will handle that huge gushing problem...
