"the wild man" or "the devil" in basque mythology Dried fruit aroma, some pear-apple fragrance. The long finish is slightly bitter and is quite refreshing. It goes well with cold meats (chorizo and ham), as an aperitif or with some hazel nuts, walnuts or chestnut. Perfect to quench the thirst of a hot afternoon.
Blending of 15 local varieties of apples, selected according to ripeness (ondo motxa, eri sagarra, anisa, gordin xuri, minxuri, azau sagarra, eztirotxia, geza xuria, mandoburua, patzulua)
Cider Making Process :
Pressed directly, varieties separated, cleared then fermented in stainless steel vats for about 4 months. Indigenous yeast cultures used exclusively. Lees stirred by hand. Carbonation occurs naturally in the bottles for 2 months (the fermentation finishes in the bottles without adding liquid sugar or yeast)
Tasting :
Drink chilled (about 7°C) Store the bottles standing away from light at a temperature below 16°C. Store for 3 to 4 years. Every bottle is dated.

(Bottle) Golden colour, slightly hazy, with brief white head. Fruity nose with apples, pears, hay, orange and a touch of yeast. Fruity, tart taste with notes of apples, pears, hay, spices, lemon, a touch of funk and a dry finish with a generous acidity. Light body, dry. Tasty and refreshing with a fresh, yeasty acidity. Solid and well made French cider. Very nice.

bottle 2021 oro scarico brilante leggera velata buona gasatura mela verde piuttosto intenso secco tannino elegante acidita abbastanza contenuta note leggermente fruttata floreale tocco minerale nota quasi citrica nel finale

Vintage 2018. My year was 6,5% ABV. Cider from Sud Ouest (Basque Land). Delivered from Bien Manger. Na tylnej etykiecie czytam ze ten cydr jest z potencjalem starzenia, zalecaja minimum 3-4 lata. Coz moze sie pospieszylem bo ten 2 letni cydr tak dobrze smakowal, ze strach pomyslec jak by sie rozwinal po kolejnych 2 latach, zabraklo pewnie by skali ocen. Teraz do rzeczy: No multi jablozkowe, bardzo jablkowe, wytrawne pelne, tresciwe, kwaskowe, nieco w posmaku ocet jablkowy. W tym cydrze z poludnia tworzy sie niesamowicie trwala piana, jak w piwie niemal, to zadkie, spotkalem sie pierwszy raz z tym. Cydr w kazdym moim odbiorze niemal idealny, zarowno w aromacie, smaku, wygladzie i ogolnej calosciowej ocenie. Pairing with Spain Chorizo and Parmegiano Regiano.

Bottle shared at home. Clear and pale golden with subtle active fizzy bubbles, not leading to a head. Cooled apples, green apples, light sunflower oily, woody, white wine, citrus tart notes. Light sweet, light tart, medium fruity and under medium dry. Very clean and crisp, no funky bugger. This represents a nice middle ground between English Cider, Spanish Sidra and French ‘Cidre’. Of which the latter is the least prominent. Everything about this feels like quality stuff but it’s just not my favorite kind of animal.

2017 bottle, many thanks Nische! Unclear pale yellow color with white head. Aroma is aromatic green apples, mineraly. Taste is green apples, dry, mineraly, a bit funk. Oily mouthfeel, light fizz. Dry and mineraly, very good!

Bottle from Systembolaget. Clear yellow with disappearing white foam. Apple juice, loads of minerals, some vanilla. Very subtle funky barnyard. Dry, with short vanilla custard finish. Beautiful.

750ml bottle from Bien Manger. 2017, 6%. Pale golden colour, large white foam head that gradually dissipates away and aroma of fruity apple, light funk. Taste is fruity apple, light woody funk, white wine notes, with some tartness, citric. Light bodied, spritzy carbonation, dry acidic finish. Quite drinkable.
