Berliner Weisse

Troublesome's meaner cousin will flail your tongue as hard as he can, but being such a little guy, you'll probably just pucker a bit. Spawned through an overnight kettle souring with our house lactobacillus culture, the wort emerges furious at what we did to it. Then, just because, we pitch a saison yeast and allow it to free rise to it's further distain. It comes out angrier than... uh, angrier than... well, something really angry. But at 3.8% ABV there's no reason for you to be too afraid.

Malts: Pils, Wheat, Flaked Wheat
Hops: A little
Secret Ingredients: Lactobacillus, Napoleon complex

Bottle. Straw beer with a whitish head. Tart aroma. Tart and light lemon flavor with light wheat. Medium bodied. Tart and lemon linger with light sourness.

Bottle from J’s. Slightly hazy glowing straw with a finger of white foam that lingers. Light sulphur, punchy lemon and gooseberry. Good carbonation and spritzy lemon. Super crushable and tart.

Bottle from Berkeley Bowl. It pours a pale yellow color with a tall white head that disappears. The aroma is bready with some sulfury funk. A little moldy orange, in a good way. The flavor is bready with some orangy citrus tartness. Light and creamy on the palate. It has good light, crisp tartness and solid wheat flavor. It feels really luxuriant in the mouth, which is unique for this style. Hints of sulfur and funk in the finish Really enjoyable.

Pours an amber from a bottle, sourdough aroma with crisp lemon and sumac notes. Flavor similar, nice and tart. Pretty good beer.

Bottle. A- Latex plastic, tart, lemons. A- Pale yellow color, hazy liquid, white head. T- Sour, tart, lemon juice, plastic, subtle vinegar. P- Light body, average texture, average carbonation, refreshing finish. O- Just the right amount of tartness to be drinkable and refreshing. Paired damn fine with the spicy jerk chicken I made. Had a bit of that latex and rubber aroma but didn’t degrade the beer at all. Pretty nice.

Bottle. Pours hazy very pale yellow with large creamy whitish head, sharp acidic aroma, high carbonation, tart, acidic taste, thin body, medium tart finish. Quite mellow beyond the initial acidic attack to your throat.

12 ounce bottle into tulip glass, no bottle dating. Pours very hazy/cloudy golden yellow color with a 2 finger fairly dense and fluffy white heat with good retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings around the glass, with a good amount of streaming carbonation retaining the cap. Aromas of big sour lemon, lime, apricot, peach, green apple, white wine, hay, straw, musty funk, leather, pepper, wheat, cracker, herbal, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast and light-moderate pale malt notes; with great strength. Taste of big sour lemon, lime, apricot, peach, green apple, white wine, hay, straw, musty funk, leather, pepper, wheat, cracker, herbal, and yeast earthiness. Moderate fruity/acidic tartness and light yeast spiciness on the finish; with lingering notes of lemon, lime, apricot, peach, green apple, white wine, hay, straw, musty funk, leather, pepper, wheat, cracker, herbal, and yeast earthiness on the finish for a good bit. Damn nice complexity, robustness, and balance of fruity/funky/acidic/spicy yeast and light-moderate pale malt flavors; with a great malt/tart/spiciness balance and zero astringent flavors after the finish. Good amount of dryness from acidity and carbonation as well. Medium-high carbonation and light body; with a very smooth, crisp, moderately acidic, and slightly creamy/grainy mouthfeel that is great. Zero warming alcohol as expected of 3.8%. Overall this is an excellent Berliner weisse style. All around great complexity, robustness, and balance of fruity/funky/acidic/spicy yeast and light-moderate pale malt flavors; very smooth, crisp, and refreshing to drink. A very enjoyable offering.

Bottle thanks to Chow. Pours a hazy yellow with medium frothy white head that lasts. The aroma is strong yeast, funk, lacto, wood. Medium mouth, funky, wheat, wood, light tart finish, very good.
