@averieswanson is our undisputed queen of Saison; having a chance to brew a version of her hallmark was an opportunity not to pass up. Orange peel, toasted cumin seed, sage & sea salt were chosen to celebrate the flavors of Austin & Santa Fe, all while playing on the delicate balance of phenols and esters that were created by Keeping Together’s house yeast strain. Once finished, the beer was can-conditioned with Mesquite Honey from @walkerhoneyfarm . The essence of Saison is a delicate balance of complexity and nuance, with flavors that call to your curiosity, rather than hit you over the head with assertiveness.
