This beer was designed to showcase the interplay between citrus, sugar and yeast. We brewed this beer with our own house made dark candi sugar as well as over 10 lbs/bbl of Valencia oranges that we grilled over hardwood for a caramelized, sugary flavor. It was fermented colder with our expressive saison yeast and then left to condition in third use bourbon barrels for over 6 months. Expect notes of Port Wine, citrus, raisins, figs and oak.

Bottle to tulip.
Appearance: black in the color with a three finger khaki foamy head which dissipated nicely to leave some light lace
Aroma: dark fruits, mixed citrusy hoppy tones; dark malts along with some dark sugary particles and sweet wood
Flavor: combines the prior noted aromas to a fine sweet citrusy and dark fruity quality; finishes dry with citrusy and dark fruity tones
Texture: medium bodied, great sipper; some smoothness but also the expected dryness rolls over the tongue; good carb level
Overall: a very nicely done black saison I would return to.
