This beer began as an experiment in patience. At its core lies a low-roast stout, rested for 13 months in Woodford Reserve bourbon barrels. Time brought soft vanilla, gentle oak and a warm, rounded structure.

Alongside it, a barleywine, fermented with an IPA yeast, aged in carefully selected cognac barrels. Adding a full, almost syrupy softness with vibrant stone fruit of peach and apricot. The cognac barrels bring elegance, layering in notes of marshmallow, vanilla and soft oak, as if fruit slowly becomes marmalade.

Finished with an imperial stout aged for 800 days in Wyoming Whiskey barrels. The roast softened into toast and nuts, with a sweet, almost jam-like warmth that hints at sherry.

Complex yet perfectly balanced, with notes of stone fruit, dates, vanilla and yellow fruit marmalade.

Beneath it lies a contemplative depth, as if you’re walking through an old library and catch a whisper of tobacco and time itself between dusty bookshelves.

This beer does not shout. It unfolds. Slowly.

A little roasty, some vanilla and some bourbon as well. You can taste a lot of different things, almost too complex at times.
