With the final bounty of our Summer season in VT arriving, we decided to brew a beer to commemorate the end of the 2017 season. Our neighbors and friends are always so giving to us at the brewery. We received pounds and pounds of hop bines with delicious smelling hops still wet and ready to be picked. Over the course of three days we set to picking and processing these hops cones. Then our friends at Rogers Farmstead in Berlin, VT provided us with large additions of raw spelt and raw wheat that were added to the grist for a pillowy and soft mouthfeel. It was fermented with our house saison yeast at a warmer temperature for notes of candy, bubblegum and clove. It's a nice way to welcome Autumn and say goodbye to the Summer season.

Appearance: semi-bright yellow color with a sly transparency about it and a finger's worth of white foamy head which dissipated nicely to leave some light lace
Aroma: sweet wheaty to floral qualities up front with a light candy to bubblegum-like sweetness in the middle then a subtle clove to woody spicy underneath part
Flavor: meshes the prior noted aromas to a fine sweet to slightly spicy toned quality; finishes semi-crisp with a rustic sort of woody spicy edge to it
Texture: light to medium bodied; sessionable; light smoothness along the tongue with mostly nothing blocking the flow; good carb level
Overall: pretty nicely done Grisette I would return to.
