Barrel fermented saison with elephant heart plums.

A Hand at Dusk is a Saison base brewed with undermodified barley and a touch of rye. The wort co-fermented in a fruiting barrel with 150lbs of Elephant Heart plums from the 2021 season grown in the Similkameen Valley by Snowy Mountain Farm. The plums underwent carbonic maceration in the barrel for a week and began fermentation from the wild yeast present on the skins before the wort was added. A mixed culture was added to finish the fermentation.

750mL bottle, pours an opaque, dirty orange with a small white head. Aroma has tons of juicy plums, gentle acidity, and subdued bugginess. Flavour is extremely acidic, with plenty of juicy plums upfront, aggressive acidity, and subdued wild yeast underneath. The acidity becomes a bit more manageable as you drink more, but it’s still too much. Not the most complex wild fruited sour, but it’s competent.

Poured from 750mL bottle (wanted to bring something on my work trip to Bella Bella knowing I wouldn't find any good beer there). Hazy dull amber orange with small white head. Nice plummy tartness upfront, light saison yeast in the background with just a hint of rye, could probably use some extra time to sit in the bottle to mellow and add some more complexity.
