For Chapter 5, Cabin aged their fruity and fun "Bright & Early" Belgian Golden Strong Ale in a mix of apple brandy and pinot grigio barrels. It’s fruit forward with big vinous white wine notes and complex pomme fruit esters. Balancing that tantalizing fruitiness is a full-bodied Belgian ale, which plays beautifully with moderate oak character from the barrels.

750mL bottle, pours a hazy golden with a small white head. Aroma has plenty of pear brandy, juicy white grapes, and some Belgian yeast. Flavour has booze, pear brandy, white wine, and light Belgian yeast. Driven by the barrels, whereas the Belgian yeast takes a backseat. Not convincing as a Belgian ale, but the barrels are pleasant. It’s okay.
