This cider was made from a rare variety of apple called Binet Rouge, handpicked from a biodiverse 90 year old orchard in Herefordshire’s Golden Valley. The Binet Rouge is one of about 30 apple varieties designated for the making of Calvados apple spirits and is approved for the Appellation d'Origine Contrôlée in the region of Normandy. Sadly we only have two trees and neither yield enough to experiment with Calvados, however we’ve discovered that it’s a variety capable of making an absolutely delicious cider. The trees had a good year in 2024 and marked our first opportunity to make a single variety Binet Rouge.
Food pairing suggestions: Grippy tannins complement a flavour reminiscent of strawberries. This sparkling cider pairs beautifully with a soft creamy goat’s cheese. We like Perroche from Neal’s Yard.
The story behind the cider: We believe that small choices can have big impacts. Whether planting a tree to bear fruit for the next generation or simply making a conscious decision to eschew the faceless, profit extracting nature of big global business in favour of supporting local crafts, growers and in turn, community. In a world that seems to be moving further away from celebrating treasures made and grown by human hand this is our call to arms to shop sustainably for both people and planet. Let’s benefit the swallows, not the amazons.

750ml bottle from Artistraw. Hazed orangey gold colour, white foam head that dissipates away and aroma of apple, fruit, strawberry hint, funk. Taste is sweet, appley, fruity, slight strawberry note, with meaty funk and drying tannin. Medium bodied, soft carbonation, drying funky tannic finish. Nicely drinkable.
