This bold and deliciously complex beer is in Imperial Buckwheat Stout aged in Tequila barrels for 13 months. Only a collection of pioneering, well seasoned, extensively traveled and passionate pub owners could come up with such a notion. A massive grain bill consisting of Pale, Munich and toasted Canadian buckwheat was blended with pearled drum-kilned barley from Chile, a generous amount of Wisconsin roasted wheat and a slug of British Crystal malts. a couple lumps of Mexican Turbinado sugar were added for good measure while we loaded the kettle with Styrian Golding hops. This carefully calculated collision of flavors, concocted over copious amounts of Orval well into the night, was laid down in fresh Tequila barrels wrangled over our southern border by the beautiful and gracious Meg Gill. We simply called the beer PNC in honor of its collaborative creators – the gothic symphony of flavors will speak for themselves. The week that PNC rolled into Paso was one to remember, but more importantly the PNC's role in the craft beer revolution should never be forgotten. Cheers to the PNC!
*Note*: this original version was only aged in tequila barrels, whereas the 2021 version was aged in tequila, bourbon, and brandy barrels.

On tap at Falling Rock. Pours a dark brown with thick creamy tan head that lasts leaving sticky lacing. The aroma is roast booze and chocolate. Thick mouthfeel with light booziness vanilla, nuts and nice lingering sweet finish. Agave flavors come in as the beer warms. Very impressive.

2013 release Pours a dark brown to black with a thin nitrogen like head that fades fast. Nose is loaded with chocolate with some roaster charred oak and an interesting sweetness Mouthfeel is tingly and uber lovely. Like a whiskey and tequila burn with sweetness. Lots of charred oak but not smoky. Sweetness is not overwhelming bit it makes the abv much more tolerable. Really an incredible beer and I like this a lot more than parabola.

22 oz. bottle at Brouwer's Cafe, pours jet black with a tiny brown head. Aroma brings out loads of bourbon, very subtle tequila, and some caramel. Flavour brings out loads of bourbon and vanilla upfront, subtle hints of tequila, a little caramel, and more vanilla. Finishes on notes of vanilla and slight sweetness. Quite complex, with no hint of alcohol. Fairly sweet, but far from cloying. Excellent stuff.

On tap at Toronado. Aroma is dominated by nice malt notes. Solid chocolate and roast but with some nice spiciness as well. Light oak and tequila notes that become more noticeable as it warms. Pours black with a fairly thick dark tan head that recedes fairly quickly to the edges while leaving a thin film on top. Flavor is full of chocolate upfront with secondary roast and spice notes. Light fruitiness to compliment - cherry, prune and fig. Some moderately strong oak notes towards the finish with some nice tequila notes. Finish is tequila and chocolate with a light bitterness. Mouthfeel is full bodied and creamy with medium carbonation. Low astringency but slightly noticeable. Medium alcohol warmth. Overall a very nice big stout. The mouthfeel is very nice and the adjunct malts add nice character. I don’t usually like tequila barrel beers but this one is quite nice. Clean fermentation adds a nice light ester character.

Pours pitch black with a small tan head. Aroma has notes of roasted malt, vanilla, oak, alcohol, chocolate, coconut and a hint of coffee. Taste is medium to heavy sweet and light to medium bitter with a long vanilla, oak, roasted and coconut finish. Body is full, texture is oily, carbonation is soft to flat.

On tap at Toronado. It pours a jet black body and a minimal sized tan head soon diminishing into a rim of bubbles. Lots of aroma, coffee, chocolate, coconut, booze notes and some molasses. Lots of nice flavors, like in the aroma. Dark flavors. Lots of them, really lovely, although a tad too alcoholic. Full body, some carbonation. Lasting finish. A quite wonderful one. 130804

PNC (apparently this version is Bourbon Barrel Aged) on tap at Barrel Works in January. Pours with a black hued body and a large brown head. Tan highlights. Aromas are cola and spicy bourbon, smells a bit like the Bernheim Eclipse. A bit nutty, oak, marshmallow, tannin, coconut and vanilla. Flavors are cola, nutty, fudge, dry alcohol, marshmallow and barrel. Full bodied, creamy, warming.
